The Bikini Cocktail

Yields 10 servings

Ingredients for the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Drink (produces 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Place the listed components into a pot, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, turn off the heat and leave to cool completely. Transfer into an sterilised bottle, close it and store in the fridge, it can be stored for about four weeks.

For the Premix: Combine the specified spirits and syrup into one big jug, let it rest for an hour, then strain best through a fine cloth, making it completely strained.

When ready to serve: Pour 85ml of your premix to a cocktail shaker packed with ice, and agitate gently for about 60 seconds until cold. Strain into a frosted cocktail glass or equivalent, decorate with the cranberries adding the final touch using a quick spritz with the mandarin essence over the drink.
